This is a pineapple upside down cake fresh out of the oven. My mother made it as a treat today for me and my daughter.
And this is the same cake 10 minutes later. Boy was it good; so good I have to share the recipe. Here are the ingredients you’ll need to make old-fashioned pineapple upside down cake.
Ingredients
2 1/2 cups flour
3 teaspoons baking powder
1/4 teaspoon salt
1/2 cup vegetable shortening
1 1/2 cups sugar
2 large eggs, beaten
1 teaspoon vanilla extract
1 cup milk
1/4 cup butter, melted
1/2 cup light brown sugar, firmly packed
9 whole pineapple slices
12 maraschino cherries
12 pecan halves
Mix flour, baking soda, and salt. Set aside. Cream shortening; gradually beat in sugar. Add eggs and vanilla; beat thoroughly. Add flour mixture alternately with the milk. Melt butter in the bottom of an oven-proof fry pan. Add brown sugar and spread evenly on the bottom of the pan; bring to a boil, stirring until the sugar dissolves. Remove from heat. Arrange pineapple slices with a cherry in the center of each slice and additional cherries and pecans between the pineapple slices. Pour cake batter on top of the pineapple mixture. Bake at 325 degrees for 45 minutes or until a toothpick inserted in the center of the cake comes out clean. Cool for 5 minutes. Loosen sides of the cake from the pan with a knife. Invert onto a serving plate.

Thank you. It was delicious. The recipe is over 50 years old. It came in a booklet that accompanied a hot plate my mom received as a wedding gift. She cooked on that hot plate for 7 years until she finally was able to afford a stove.

I baked a pineapple upside down cake for my coworkers a few years ago. They loved it and all remembered eating them in their childhood but hadn’t eaten one in many years.
So moist! I feel kind of lazy this morning (it’s my metabolism) plus I never start cooking before lunch time. Could you please send me a huge slice? I desperately need one! 😉

I remember getting in to trouble making this cake. I made it in a spring form pan and the butter and juice oozed out and made a big mess of the oven! It tasted delicious though!

The cake is beautiful and I love old recipes. I have some of my Mom’s also and just love making them, they usually work better than some of the new recipes I try. Pineapple upside cake is one of my favorites and I love subbing other fruits for the pineapple too!
